Sweet Potato Nachos

Now just looking at this picture makes my mouth water. When I do fitness classes late at night I don't really want to come in and have to do a lot of cooking and this recipe is simple. All you have to do is let the oven do the work and enjoy at then end  Want to know how to make these sweet potato nachos? Well that's why your here, so here's the recipe........

Ingredients
  • Lean Diced Bacon 
  • 2 Large Sweet Potato Nachos
  • Cheese
  • Oil 
  • Kitchen Foil
  • Frying Pan/ Saucepan & Baking Tray


Preheat the oven to 200 degrees

1. Start by getting two large Sweet Potatoes and wash them. Place on a chopping board with sharp knife.
2. Cut up the Sweet Potatoes into small 1cm width circles - be careful when cutting as Sweet Potatoes requires a lot of ab work!!
3. Evenly place these potato circles on a baking tray which is pre-covered with kitchen foil. Cook these for 35-40 minutes (however burn't your like them) and turn them over halfway through. 


4. In a frying pan (preferably, or if your a student - a saucepan!) pour a tiny bit of oil and heat this up.
5. Place the diced bacon bits into a pan and cook until its done. This can be done whilst you wait for your potatoes to cook, leave this to rest on the side. 


6. Once the potatoes are cooked bring them together on the baking tray to make a circle, place cheese and half of the bacon on top of the pile. Cook this for a further 4-5 minutes. 
7. Once cooked place into a bowl and cover further with cheese and the other half of the bacon (and even ketchup if your like me!!)

I absolutely love this recipe, its not the quickest but it requires low amount of energy.
